2017 Raw Wildflower Honey (Late Harvest)

We have a limited supply of our raw honey available! This honey was harvested from our hives in Stanwood and Lynnwood during the month of September. It consists primarily of blackberry and Japanese knotweed honey. But it is truly "wildflower", in that the bees are free to forage on whatever plants they choose, and this comes through in a complex flavor profile. Because this is fall honey, it is darker in color than our spring honey, with a deeper flavor.

Once the frames of honey are removed from the hives, I use a knife to cut the layer of white wax from the outside of each frame. The honey is then extracted using a stainless steel "spinner". I manually turn a crank that spins the frames, and centrifugal force causes the honey to fly out of the frames and down into the bottom of the spinner. From there, it is poured through a  sieve to remove large pieces of debris (such as wax chunks or bees). It ends up in our bottling bucket, where I carefully weigh out each and every single jar. 

Our honey is never heated. We do not use fine filters to remove pollen. We only bottle our honey in glass jars. And the entire process is done by hand. The result is a truly delicious, raw, natural  honey - which always sells out quickly!
